Ingredients

  1. 2 lbsRed potatoes (6 med), boiled and cut into bite-sized pieces)
  2. 1-2 Tbspapple cider vinegar (optional)
  3. 1Red onion, minced (white is ok)
  4. 1/4 cupPickles, chopped fine (about 2-3 whole pickles)
  5. 5Eggs, hard boiled, chopped into 1/2" pieces
  6. 3/4 cupMayonnaise
  7. 2Tblsp Dijon mustard
  8. 3-4celery ribs, chopped fine
  9. 2tblsp fresh Parsley, minced
  10. 6 slicesBacon, cooked, cooled, and chopped or crumbled very fine
  11. to taste Salt and pepper

Steps

    Scrub potatoes and put in a large pot. Cover with 1" water and boil over medium-high heat until a paring knife can be put through with little resistance, but skin is not falling off (about 30 minutes?). Drain and let cool.

    Optional: Toss cut potatoes in 1-2 Tblsp red wine or apple cider vinegar. I found this to be too much vinegar, unless I took out some pickles.

    TIP: Chop hard boiled eggs in an egg slicer by slicing 1 way, then rotate the egg 90° and chop the other way

  4. 4

    Mix in remaining ingredients except parsley. Salt and pepper to taste. Add parsley towards the end so it doesn't get too mashed down.

  5. 5

    Taste and add more of any ingredients until you like it! Onions and pickles will get stronger as it sits in the fridge.
