Scrub potatoes and put in a large pot. Cover with 1" water and boil over medium-high heat until a paring knife can be put through with little resistance, but skin is not falling off (about 30 minutes?). Drain and let cool.

Optional: Toss cut potatoes in 1-2 Tblsp red wine or apple cider vinegar. I found this to be too much vinegar, unless I took out some pickles.

TIP: Chop hard boiled eggs in an egg slicer by slicing 1 way, then rotate the egg 90° and chop the other way

Mix in remaining ingredients except parsley. Salt and pepper to taste. Add parsley towards the end so it doesn't get too mashed down.

Taste and add more of any ingredients until you like it! Onions and pickles will get stronger as it sits in the fridge.
