Tangy Mango and Pepper Chicken

Heat Olive Oil over medium-high heat. Season Chicken with Salt and Pepper. Cook in batches and set aside. Careful not to over cook.

Combine Mangoes, Peppers, Onion and 60 ml Lime Juice in a large bowl and set aside.

Once Chicken is done, place Mango mixture into the pot, add Garlic. Sauté till Onions soften and Garlic is cooked. Mangoes turn into a sauce.

Return Chicken to the pot and stir through. Finally add 30 ml Lime Juice just before you serve with steamed Jasmine rice.
