Ingredients

4 - 5 people
  • 60 mlOlive Oil
  • 1 kgChicken breasts, cut into strips
  • 10 mlSalt
  • 5 mlfreshly ground Black Pepper
  • 3Mangoes, peeled and chopped
  • 3Red Peppers, julienned
  • 2Red Onions, peeled and diced

  • 90 mlLime Juice, divided
  • 30 mlcrushed Garlic

Steps

    Heat Olive Oil over medium-high heat. Season Chicken with Salt and Pepper. Cook in batches and set aside. Careful not to over cook.

    Combine Mangoes, Peppers, Onion and 60 ml Lime Juice in a large bowl and set aside.

    Once Chicken is done, place Mango mixture into the pot, add Garlic. Sauté till Onions soften and Garlic is cooked. Mangoes turn into a sauce.

    Return Chicken to the pot and stir through. Finally add 30 ml Lime Juice just before you serve with steamed Jasmine rice.

Tips

How to dice an onion with no tears

Using a chef's knife, slice off top-end. Don't slice off the roots. Peel the onions.
