Ingredients

2 x 19 minutes
2 people
  1. 1chicken leg quarter, or breasts, or thighs, one pound, skin on, bone in
  2. 1 Cupbreadcrumbs
  3. 4 Tbsmayo, brushed on, like kewpie
  4. Sprinkle of Flaked seasalt
  5. 1 Tspbrown sugar
  6. Dipping sauce: Tbs mayo, Tbs soy sauce, Tbs mirin cooking wine
  7. Equipment : oven at 350 F degrees, brush
  8. Cost: chicken $2, mayo 38 cents, breadcrumbs, other 33 cents, per person $1.34

Cooking Instructions

  1. 1

    Wash, dry, brush room temperature chicken with mayo and brown sugar mixed in, roll through breadcrumbs, sprinkle with salt, put in oven at 350 F degrees.

    Set timer. Check how long it takes for a golden crust to develop, flip chicken over, bake other side same amount of time. Prick with fork to see if juice runs clear. Done. Mine took 19 minutes per side.

    Mix soy sauce, mayo and mirin or other white wine in dipping cup and serve with dinner.
