Eggless Blueberry mini pancakes

Tried this recipe for ten o'clock tea. I really wanted pancakes but had no eggs. I gave it a try, and it turned out perfect! I hope you enjoy it too.

Tried this recipe for ten o'clock tea. I really wanted pancakes but had no eggs. I gave it a try, and it turned out perfect! I hope you enjoy it too.

Combine all ingredients in a large bowl and mix to combine. Don't mind the lumps. Allow to rest for five minutes

On medium low heat, set a pan and add afew drops of veg oil.

Once warm enough but not too hot spoon 1/4 cup of the bater onto the pan.

Allow to cook till air bubbles start rising.

When the top looks almost dry turn the pancakes and cook for two minutes

Once cooked through, remove from the pan and set aside.
In case the pan gets too hot, turn off the heat and wait for a few minutes, then resume cooking. Add oil only when necessary. - 7
Serving suggestion, with black tea.

When completely cool, you can store them in the fridge in an airtight container or ziploc bag.
