Crustless Flan Pâtissier

Preheat the oven to 350°F (180°C). Pour 1 1/2 cups of the milk into a saucepan. Add the vanilla. Bring to a boil.

In a mixing bowl, whisk the egg yolks with the sugar, cornstarch, and the remaining 1/2 cup milk. Add this mixture to the hot milk. Whisk well. Let it thicken gently, stirring constantly. Pour the mixture into a small baking pan (about 6 inches/15 cm) for a nice thick flan.

Bake for about 25 minutes, keeping an eye on it.

Let cool. Cover and refrigerate for several hours or overnight.
