Start by soaking chole overnight.

Next morning, boil the chole after adding 1 tbsp baking soda for 4 whistles.

For the tomato puree, chop into small pieces and blend along with cloves and cinnamon.

To a pan, add oil, mustard seeds, jeera, dried red chillies and hing.

Now add the tomato puree and white paste and cook till the rawness disappears.

Add the chole, stir and add red chilli powder, turmeric powder, jeera-coriander powder, garam masala and salt to taste and stir well.

Now add 3 tbsp curd and cook until the oil seperates. Chole are ready to serve.

For bhature, knead a dough with whole wheat flour, 2 tbsp oil, 3 tbsp curd and salt to taste. Let it rest for 20 minutes.

Roll the dough into a round bhatura and fry both the sides.

Plate the chole and bhature along with some fryums amd buttermilk and enjoy ✨
