I made my first version of Korean bibimbap dinner, marinading farm grown grass fed beef. Superthin sliced beef in an applesauce type pear/onion marinade, called bulgogi. Here is how I made it.
I found the right balance between fruity sweet spicy marinade for the beef, sesame oil roast for the rice, stirfry mild gochujang and mirin sauce over the eggs and fresh vegetables.
To me, compared to other world class rice dishes like sushi, paella, nassi goreng, pilaf, risotto, biryani, panang curry and dimsum, bimimbap tastes more like reheated leftover rice than a dinner dish….

Ingredients

4 hour marinade, 1 hour rice, 15 min cook
2 people, 2 dinners
  1. 14 ouncesgrass fed beef half frozen, sliced 1/8 th inch superthin, across the grain
  2. 14shiitake mushrooms
  3. 1 cupmarinade: minced Garlic, grated onion, grated asian pear, soy sauce, mirin, pepper, brown sugar
  4. 5 Tspsauce: 1 Tsp Gochujang paste, 1 Tsp each garlic, soy sauce, vinegar, sugar, mirin
  5. 1/2 cupbasmati Rice: bring to boil, rest an hour
  6. 1 Tbssesame oil to panfry the rice
  7. 1 Tspsesame seed
  8. 1 Tbseach Blanched Spinach, bean sprouts, carrot, mushrooms, scallion, cucumber, sweet red pepper
  9. 1fresh farm egg, poached
  10. Side dish of Kimchi:
  11. Equipment: cast large iron skillet, cast iron sauce pan with lid to cook rice
  12. Cost: grass fed farm free or steak $12, vegetables, other $4, rice 50 cents, sauce $1, egg 20 cents, per dinner $4.55

Cooking Instructions

4 hour marinade, 1 hour rice, 15 min cook

    Make Marinade sauce, marinade beef in pear and onion mix, sauces, spices, meat sliced superthin, half frozen, 1/8th inch, four hours.

    Make the gochujang sauce, dilute spicy paste with four mellow ingredients, garlic, sugar, soy sauce, mirin, start with teaspoon of each. Taste to find your perfect sauce mix.

    Roast shiitake mushrooms six minutes in sesame oil in skillet. Slice and Set aside to put on rice. Roast the cooked rice to a crust in sesame oil in cast iron skillet. Place in heated bowl. Flashfry beef in hot skillet, one minute each side, place on rice.

    Roast other ingredients in sesame oil in cast iron pan. Place on top of bulgogi beef.

    Drizzle dinner with gochujang sauce, open poached egg, sprinkle sesame seed over. Serve kimchi on the side. Enjoy.
