Ingredients

Cake night before, 60 min in oven, 30 min on grill

  1. 2New York steaks, one pound each
  2. 2Idaho baking potatoes, 2/3 pound each
  3. 2 slicescured bacon, chopped and fried
  4. 2spring onions, chopped, fried in bacon fat
  5. 2fresh corn cobs in the hull
  6. 2 Tspgrassfed butter
  7. 2 cupsiceberg lettuce, chopped
  8. 1 cupmung beans sprouts, fresh
  9. 1peeled cucumber, chopped
  10. 16cherry tomatoes, whole
  11. 4green onions, chopped
  12. 2peeled shallots, sliced
  13. 2peeled hardboiled fresh farm eggs, chopped
  14. 4 Tbshomemade buttermilk ranch dressing
  15. 1/4 Tspeach flaked seasalt and freshly crushed black peppercorns
  16. 40fresh raspberries
  17. 20fresh blueberries
  18. 2 Tbswhipped cream
  19. Drizzle of homemade plum brandy
  20. 1chimney charcoal
  21. Equipment: BBQ, charcoal chimney, oven, skillet
  22. Cost: steaks $28, potatoes $2, corn $2, salad $4, cake, charcoal, other $4, per dinner $20

Cooking Instructions

Cake night before, 60 min in oven, 30 min on grill

    Decorate Lemon short cake with blueberries and raspberries like the American flag on a layer of whipped cream, make the night before.

    Soak Idaho potato baker potatoes in ice cold water. Scrub. Make incision to keep potatoes from exploding, then bake 60 minutes in 425F degree oven. Then rub with olive oil and flaked seasalt and finish 15 minutes over charcoal coals till skin is crispy and smokey.

    Chop and mix pan fried green onions and chopped bacon with grassfed butter, pepper and salt to stuff potatoes with. Slice baker potatoes lengthwise, press open, fill with stuffing and bacon fat. Optional Drizzle of plum brandy over.

    California Cucumber salad. Use Hardboiled eggs, chopped, cucumber, green onions, cherry tomatoes, shallots, iceberg lettuce, mung beans, and buttermilk ranch dressing.

    California fresh Grilled corn on the cob. Soak fresh corn on the cob in the husk an hour in cold water. Place over hot charcoals and grill eight minutes each side. Serve in the husk. Peel and rub corn with grassfed butter. Save husks to make tamales.

    Barbecued grassfed New York Steaks. Dry rub steaks only with crushed pepper and granulated garlic, do not use salt. Let come to room temperature on kitchen counter. Sear one minute on each side over hot charcoals till flaming, then finish over indirect heat till 135F degrees inside, measure with internal probe, for medium rare. Now sprinkle with flaked salt or rocksalt to taste, then serve.

    Served with early May 2025 spring harvest homemade Amish rhubarb wine. Happy Holiday.
