Root vegetables are good as fasting food. Taro root is good for health. It is rich in healthy phyto chemicals. Mainly Quercetin destroys carcinogens. Minerals can reduce diabetes and blood pressure and strengthen bones. Today I made chops differently. Marinated cooked taro in a marinade containing oil, spice powders and also tamarind paste. Then roasted to make aromatic chops. #mh

Ingredients

  • Marinade
  • 1 tablespoonsesame seed oil
  • 1 tablespoonMustard seedsa
  • 1 tablespoonFennel seeds
  • 1/2 tspFenugreek powder
  • 1/2 tspturmeric powder
  • 1/2 tspAsafetida powder
  • 1 tablespooncumin powder
  • 1 tablespooncoriander powder
  • 1 tablespoonCurry leaf powder
  • 2 tbspChili powder
  • 2 tablespoonsTamarind paste
  • As required Salt

    Wash the taro thoroughly, place them in a bowl. Do not add water to the bowl. Steam cook in a pressure cooker following manufacturer’s instructions for operating the cooker Place the pressure cooker on high flame. After building up the pressure, simmer the fire. When the tato is 70% cooked, turn off the stove. Don't over cook. Turn off the stove after 5 minutes. Take out the cooked tar and let it cool. Peel the skin of the taro.

    Marinade: Heat oil in a heavy pan over medium heat and add mustard seeds, cumin seeds and spices.. Add all the spice powders.
    Dissolve the tamarind paste in ¼ cup of water and add to the pan. Add salt. Simmer the fire. Let the tamarind thicken a little. Turn off the stove. Let marinade coat all sides of the taro. let them soak in the marinade for 30 minutes.

    Then turn on the stove. Roast the taro in this pan over low flame. Then turn the veggies now and then slowly. without mashing the taro. The roast will be done in 10-15 minutes.
    Taste and serve. Tastes divine when served with curd rice
