Spicy Zunka & Soft Bhakri

Zunka & bhakri combo is a Maharashtra's famous recipe. It's confronting ,staple food & easy to prepare. In short, Zunka is nothing but onion & besan sabji which can be made in a ziffy way & good option for sabji.
I m going to try different method for making bhakri. This bhakri you can roll just like normal roti. Its stays soft for long of time. Just try it out!!

Steps

In first step heat 2 cups of water in a kadhai Or pan. Add salt to taste. Allow to boil water. Make the gas flame low.Then add 1 cup jowar flour into boiling water. Stir the flour quickly so no lumps can form. Cook for 5-6 min.this makes a good dough consistency & mixture starts leaving at the sides of pan.

Cover & cook the dough for 4-5 min.Remove lid. Transfer the dough into plate. Let it come to normal temperature. Once it's warm knead the dough well. Make equal sized balls. Cover the balls so they can not get dry.

Heat tawa Or griddle. Take a bhakri dough ball. Knead it little again. Dust with dry jowar flour. Roll bhakri gently like normal roti.It can be rolled as thin as possible. Apply flour if it sticks to platform.

Now place rolled bhakri on heated tawa. Turn gas flame high.
Bhakri has small bubbles at it's base, then flip bhakri & roast it's other side. Bhakri puffs up well. Roast well form both sides. Our soft bhakri is ready. - 5
Let make spicy, tikha zunka. In a bowl pour 1 cup besan. Add 1/2 cup of water into besan. Combine both & mix well. Rest the batter for 10 min. No lumps should be there. Heat pan Or kadhai. Add oil. Add mustard seeds. Let them splutter. Then add jeera + Asafoetida + garlic minced + green chili chopped + curry leaves. Stir all ingredients. Then add chopped onions. Cook onions for 5-7 min or until transparent.

In next step pour the besan & water mixture slowly into the tempering. Gas flame be on low. stir besan mixture nicely & quickly. Continue on stirring until besan turns into lumpy form.

Add salt as your taste. Then cover & cook zunka for 4-5 min. Remove lid & cook again until besan turns little dry. or cook for 7-8 minutes.

Spicy Zunka is ready. Serve zunka with hot bhakri or roti. I here served onion & tomato koshimbir & aamti(dal) & onion slices with bhakri.
