Bean Sprout Only Yakisoba

A simple yakisoba made with just bean sprouts. Perfect for a solo meal or as a snack to go with drinks. Simple is delicious!
(Recipe slightly updated on 3/24/2007)
Recipe background:
I specialized in making yakisoba with just bean sprouts when I ran out of cabbage, and then I found the same dish at a local izakaya. I improved my recipe based on the restaurant’s flavor.

Steps

  1. 1

Cut the ginger into thin strips. Rinse and loosen the yakisoba noodles in a colander.

  2. 2

Heat oil (such as scallion oil) in a frying pan. Sauté the ginger, then add the yakisoba noodles and stir-fry. Add the bean sprouts and toss with 1 tablespoon sake.

  3. 3

Once the noodles are cooked, add a splash of soy sauce and about 1 tablespoon oyster sauce to season. Add plenty of black pepper to taste.

  4. 4

Yobekoro kindly calculated the calories: For 4.2 oz (120 grams) of noodles, one serving is about 297 calories! Pretty healthy, right?
