Bean Sprout Only Yakisoba

Cut the ginger into thin strips. Rinse and loosen the yakisoba noodles in a colander.

Heat oil (such as scallion oil) in a frying pan. Sauté the ginger, then add the yakisoba noodles and stir-fry. Add the bean sprouts and toss with 1 tablespoon sake.

Once the noodles are cooked, add a splash of soy sauce and about 1 tablespoon oyster sauce to season. Add plenty of black pepper to taste.
