Chunky cheesy chicken nuggets

A really easy tasty recipe, perfect for eating at home, for using in a chicken caesar salad or for a picnic. Delicious with a tasty dip like yoghurt and chives, spicy tomato sauce or hoisin sauce. You'll find your hands are the best utensil as far as coating the chicken in egg and crumbs is concerned, so have plenty warm water and soap handy. Enjoy!!!
Chunky cheesy chicken nuggets

Beat the eggs well and add the oregano, salt and pepper. Cut the chicken into whatever size nuggets you prefer. Add to the egg, coat well and leave to sit for 10 minutes. Blitz the bread to get breadcrumbs - I don't blitz for too long so that the nuggets have a bit of a rough crunch when they are done. Grate the cheese, put the crumbs and cheese in a bowl and mix well.

Coat the chicken in the breadcrumbs - make sure all sides are well-coated.

Heat some oil in a pan and gently fry the chicken. You won't need lots of oil - just enough to do a couple of batches. Turn each piece of chicken over with some tongs so that they cook on both sides.

Put the chicken on a piece of kitchen towel to drain off any excess oil. Enjoy!!!
