Mix cold soba noodles with hot dipping sauce... It may not be as good as duck seiro, but the chicken broth is delicious too. Thank you for making this recipe popular on 12/3/29. The origin of this recipe: I couldn't forget the taste of duck seiro I had at a soba restaurant in Aso, so I tried making it easily with chicken.

2servings soba noodles
3 1/2 oz (100 g)chicken
1 stalkgreen onion
Dashi broth
1 2/3 cups (400 ml)◎bonito dashi
2 tablespoons◎dark soy sauce
1/2 tablespoon◎mirin
1 teaspoon◎sake
1/2 teaspoon◎Hondashi
Salt to taste

Cut the chicken into bite-sized pieces, sprinkle with a little sake, and sear in a frying pan until about 80% cooked.

Slice the green onion diagonally and toast in a toaster or similar appliance until browned.

Put all ◎ ingredients in a pot, add the chicken from step 1, bring to a boil, then reduce to low heat and simmer for about 1 minute. Turn off the heat and add the green onion from step 2. Taste and adjust with salt.

Cook the soba noodles, then rinse in ice water if possible and serve on a strainer or similar dish. Pour the hot broth from step 3 into a bowl.

Serve with yuzu pepper or chili powder if you like.
