Super Delicious Nabeyaki Udon Broth

For nabeyaki udon, I make a homemade udon broth instead of using bottled noodle soup base or dashi soy sauce. Add plenty of your favorite toppings and enjoy it piping hot!

This is great when you don't have dashi soy sauce or noodle soup base on hand.
You can adjust the sweetness to your liking!

I use dashi packs like these.

Add water and the dashi pack to a pot. Bring to a boil, then simmer on low for about 3 minutes. Remove the dashi pack.

Add the seasonings.

Taste and add a little more salt or light soy sauce if needed.

The flavors from meat and vegetables will make the finished broth even tastier than it is at this stage.
