Recipe background:
My kids wanted to eat monjayaki, so I researched and combined different ideas.

Steps

  1. 1

In a large bowl, combine all ingredients up to the Worcestershire sauce.

  2. 2

Roughly chop the cabbage, then mix it with the dried shrimp and any other optional ingredients.

  3. 3

Add about 3/4 cup (200ml) of the liquid mixture from step 1 to the bowl with the cabbage and mix well.

  4. 4

Heat a griddle or electric skillet with a little oil. Add just the cabbage mixture and sauté until softened.

  5. 5

Shape the sautéed mixture into a ring (like a donut) on the griddle, then pour the rest of the liquid mixture into the center. It’s okay if it overflows a bit.

  6. 6

When the batter starts bubbling, mix everything together and spread it out. Cook to your preferred doneness and enjoy!

  7. 7

Cheese, spicy cod roe (mentaiko), corn, curry powder, mochi, kimchi, cheese-filled fish cake, and more all taste great as add-ins.

  8. 8

At our house, we also add the contents of a dashi packet for extra flavor.

  9. 9

Leftover curry version: Use a single serving of curry with its ingredients, only add sauce for seasoning, and reduce the water a bit. Instant yakisoba noodles also work well!
