Onion Gratin Soup with Sandwich Bread
We don't always have French bread, so we always make this with sandwich bread at home. The flavors of onion and bacon make it absolutely delicious.

Finely chop or thinly slice the onion.

Cut the bacon into 1/4-inch wide strips.

Heat the butter in a small pot, add the onion, and sauté over low heat until caramelized.

Add the bacon and continue to sauté until crispy.

Add the water, bring to a boil, then add the bouillon cubes. Season with salt and black pepper to taste.

While doing step 5, cut the sandwich bread into 9 pieces and toast them. Preheat the oven to 430°F (220°C).

Just before the oven is preheated, pour the soup into bowls, add the bread pieces, top generously with cheese, and bake in the oven for 10 minutes.

Enjoy while it's hot.
