Ingredients

Serves 4 servings
  1. as neededNapa cabbage,
  2. 1/2 packshimeji mushrooms
  3. 1 packageenoki mushrooms
  4. 1 blockgrilled tofu
  5. 10 1/2 oz (300 g)thinly sliced beef for sukiyaki
  6. 1 handfuldried wheat gluten (fu)
  7. 1 packageshirataki noodles
  8. 1soft-cooked egg per person
  9. as neededGreen onions,
  10. 3/4 cupdashi stock (200 ml)
  11. 1/2 cupmirin (100 ml)
  12. 1/2 cupsoy sauce (100 ml)
  13. 3–4 tablespoons sugar

Steps

  1. 1

    Bring the dashi, mirin, soy sauce, and sugar to a boil in a pot.

  2. 2

    Cut the napa cabbage and tofu into bite-sized pieces. Trim the stems from the mushrooms.

  3. 3

    Boil the shirataki noodles briefly to remove any odor, then cut into easy-to-eat lengths. Soak the dried wheat gluten in water, then squeeze out the excess water.

  4. 4

    Layer the beef, vegetables, mushrooms, tofu, shirataki noodles, and wheat gluten in the pot. Simmer until everything is cooked through.

  5. 5

    Serve the sukiyaki-style simmered dish in bowls. Top each serving with a soft-cooked egg and sprinkle with green onions.

  6. 6

    NanaPoo-chan's tip: Try it as is first! Next, serve it over rice as a donburi. Finally, add udon noodles at the end—everyone will love it!
