Ingredients

depend on size
  • 3/4 cupshortening (I use Cristo butter flavor)
  • 3/4 cupsugar
  • 1egg
  • 1 cupcooked carrots
  • 2 cupflour
  • 2 tsp.baking powder
  • 1 tsp.salt
  • 1 tsp.vanilla
  • 1 tsp.grated orange rind

Steps

  1. 1

    Mash cooked carrots. Mix all together.

  2. 2

    Drop by teaspoonful onto parchment paper. Can flatten, but I leave mounded.

  3. 3

    Bake in 350 degree oven for 10 to 13 minutes

  4. 4

    Note peel carrots and chop about 2 cups raw makes 1 cup mashed, can use peeled baby carrots
