The story behind this recipe
I once bought 'Grandma's Green Chili Miso' at a roadside station, and it was so delicious that I decided to try making it at home based on the ingredients list.
Steps
- 1
Wash the green chili peppers, drain well, remove the stems, and chop finely or slice into rings. Alternatively, use a food processor.
- 2
Combine the ingredients marked with an asterisk (*). (This time, I used red miso: Hatcho miso in a 1:1 ratio.)
- 3
Heat sesame oil in a pot and sauté the chopped chili peppers.
- 4
Sauté over medium heat for about 5 minutes until the moisture evaporates and the peppers become tender, then add the combined seasonings from step 2.
- 5
Lightly sauté over medium heat until it starts to simmer, then cover and cook on low heat for 5 minutes.
- 6
Remove the lid and continue to sauté over low to slightly higher low heat for about 10 minutes. Stir constantly to prevent burning.
- 7
It's done when the moisture has evaporated and it becomes thick enough not to fall off a spatula.
