Rice Kolakata (Steamed Rice Balls)

I am pretty sure a lot of South Indians have grown up eating Rice Kolakatas. My grandma (on my mom's side) made a lot of these when I was little and after our wedding, Kingsley's mom made this a couple of times when we were in India. Kings and I share a few food favorites and this is one - so the other night I asked his mommy how she makes it and we made this over the weekend. Kings get 50% credit on this one because he came in to help for a little while

In a separate bowl mix the coconut and sugar. Take some dough in your hands, flatten it a bit with your palms, and in the middle spoon a little of the coconut and sugar mixture. Seal it and put it on the tray. You might find the sealing part a little trickey, but play around and for sure you will get this kolakatas fine

Let this cook - it took less than 30mins, and I tested it by cutting one in the middle and trying to see if the rice flour had cooked through. When the smell of the rice flour is gone, its ready to be served!

This is great for breakfast or as a snack. You might need to serve this with some sugar on the side, but it totally depends on the person's choice
