Add all ☆ ingredients to the bread machine and run the dough cycle until the first rise is complete.

Soak the dried shiitake mushrooms in water to rehydrate. Finely chop all the vegetables.

Mix all ★ ingredients together in a bowl.

It’s easier if you divide the filling ahead of time. This recipe makes 10 buns—sorry for the extra!

Once the dough is ready, divide it into 8 equal pieces and cover with a damp cloth.

Roll each piece of dough into a circle about 6–7 inches (15–17 cm) wide. Place the filling in the center and pleat the edges to seal.

Steam the buns in a preheated steamer for 12 minutes, leaving space between each bun.
