Ingredients

3 servings
  • 3servings cooked udon noodles
  • 7 oz (200 g)thinly sliced beef
  • 2 tablespoonssoy sauce
  • 2 tablespoonsmirin (sweet cooking rice wine)
  • 1 tablespoonsake (Japanese rice wine)
  • 1/2 tablespoonsugar
  • 3 1/2 tablespoonswater (about 50 ml)
  • Grated daikon radish, as desired
  • For each serving: 1/2 cup to 1/2 cup plus 1 tablespoon (100–120 ml) mentsuyu (noodle soup base) diluted with water to the strength of hot noodle soup
  • Other toppings as desired: cucumber, green onion, shiso leaves, grated ginger, etc

Steps

  1. 1

    Dilute the mentsuyu with water to the strength of hot noodle soup, prepare enough for all servings, and chill in the refrigerator.

  2. 2

    Add the ingredients marked with ◆ (soy sauce, mirin, sake, sugar, water) to a pot and bring to a simmer. Add the beef and separate the slices with chopsticks as it cooks.

  3. 3

    Once the beef is cooked through, turn off the heat and let it sit so the flavors soak in. (Letting it rest for 20–30 minutes makes it even tastier.)

  4. 4

    Cook the udon noodles according to the package instructions. Rinse with cold water and drain well.

  5. 5

    Arrange the udon, beef, grated daikon, and any other desired toppings in bowls. Pour the chilled soup from step 1 over the top and enjoy!
