Chilled Udon with Beef and Grated Daikon

Recipe background: In our house, we get lots of requests for cold noodles in the summer. I created this udon recipe for a satisfying dinner with hearty beef and refreshing grated daikon.

Dilute the mentsuyu with water to the strength of hot noodle soup, prepare enough for all servings, and chill in the refrigerator.

Add the ingredients marked with ◆ (soy sauce, mirin, sake, sugar, water) to a pot and bring to a simmer. Add the beef and separate the slices with chopsticks as it cooks.

Once the beef is cooked through, turn off the heat and let it sit so the flavors soak in. (Letting it rest for 20–30 minutes makes it even tastier.)

Cook the udon noodles according to the package instructions. Rinse with cold water and drain well.

Arrange the udon, beef, grated daikon, and any other desired toppings in bowls. Pour the chilled soup from step 1 over the top and enjoy!
