Cut the stems off the eggplants and slice them diagonally into 1/4-inch (about 5 mm) thick pieces. Heat oil in a skillet and cook the ground meat.

Once the ground meat is cooked through, add the eggplant and stir-fry so it absorbs the oil.

Add the ginger, sake, mirin, soy sauce, and sugar in order. Stir-fry until the eggplant is tender. Serve on a plate and sprinkle with white sesame seeds if you like.
