Ingredients

2 quarts

4medium onions, chopped
1-1/4 tsppepper
1/2 cupolive oil
4garlic cloves, minced
12 cupschopped peeled fresh tomatoes
3bay leaves
4 tspsalt
2 tspdried oregano
1/2 tspdried basil
2 (6 oz)tomato paste
1/3 cuppacked brown sugar

Steps

In a large Dutch oven, saute the onions and the pepper in oil until onions are tender.

Add garlic, tomatoes, bay leaves,salt, oregano, and basil.

Simmer for 2 hours, stirring occasionally.

Add tomato paste and brown sugar; simmer 1 hour longer.

Remove bay leaves.

Serve over pasta!
