Ingredients

Serves 2 servings
  • 1large piece chicken katsu (store-bought or homemade)
  • 2green bell peppers
  • 1/2onion
  • 1/2carrot
  • 2eggs
  • 2/3 cupdashi broth (about 150 grams)
  • 2 tablespoonseach sake and mirin
  • 1 1/2 tablespoonssugar
  • 3 tablespoonssoy sauce

Steps

  1. 1

    Prepare a large piece of chicken katsu from the store deli or make your own.

  2. 2

    Sauté the carrot, onion, and green bell peppers.

  3. 3

    Once sautéed, add the seasonings and bring to a gentle boil.

  4. 4

    Add the chicken katsu. When the katsu has absorbed some of the broth, pour in the beaten eggs. Cover with a lid and cook until the eggs are just set, then turn off the heat and serve using a spatula.
