Chicken Mince Cutlets with Tofu and Cabbage

Turn your usual mince cutlets into a healthier version! This recipe is easy on your wallet and your waistline. I usually add cabbage to my mince cutlets, but I wanted to cut even more calories, so I swapped the usual ground pork for ground chicken and added tofu. The result is surprisingly light and fluffy—I'm really happy with how it turned out!

Wrap the tofu in a paper towel, place it in a microwave-safe dish, and microwave for about 2 minutes. Drain the water and press the tofu to remove excess moisture.

Roughly chop the cabbage. You can use it raw.

Add the salt to the ground chicken and mix well until it becomes sticky. Add the tofu, cabbage, egg, black pepper, and nutmeg, and mix again until well combined.

Divide the mixture into 8 portions. Coat each with a thick layer of flour-water mixture, then with panko breadcrumbs. Fry in oil at 340°F (170°C) until golden and cooked through.
