Healthy Baked Menchi Katsu (Japanese Ground Meat Cutlet)
A healthy yet juicy and delicious menchi katsu.
Recipe background: I wanted to make fried foods without deep frying, and after many failed attempts, I finally succeeded in making juicy and tasty menchi katsu!

Finely chop the cabbage and onion. Preheat the oven to 400°F (200°C).

Sauté the cabbage and onion until softened. Transfer to a tray or plate and let cool slightly.

Toast the panko breadcrumbs in a pan until they are golden brown.

Mix the ground pork with the sautéed vegetables. Season with salt and pepper.

Shape the mixture into patties. You can add melty cheese inside if you like!

Coat each patty in beaten egg, then in toasted panko. Place them on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 23 minutes.

Serve with your favorite vegetables. On this day, I enjoyed menchi katsu with pork miso soup!
