Cut the chicken into large bite-sized pieces and season with salt and pepper. Slice the onion and break the mushrooms into bite-sized pieces.

Heat olive oil in a pot and sauté the onion. Once it becomes tender, add the chicken and cook until the surface changes color.

Add red wine, ketchup, sauce, and sugar, and let it simmer. Add the mushrooms and continue to simmer. The goal is to reduce the liquid by about half.

Adjust the taste with soy sauce, salt, and pepper. Serve on a plate to finish.
