I love the texture of this dessert, but my daughter doesn't like ginger.
I wanted to create a simple ginger-free soy milk agar jelly.
If it's too soft, it releases water after serving. If it's too firm, the texture isn't quite right.

In a large pot, combine 500ml of room temperature soy milk with agar powder and sugar. Stir with a wooden spatula and simmer over medium heat for 2 minutes, being careful not to let it boil.

Tilt the pot slightly to ensure no agar powder is left undissolved at the bottom. If any remains, extend the cooking time.

Some have reported it didn't set (sweat). Agar Cook sets with 4g. Other agar powders might require a bit more.

Once the agar powder is dissolved, remove from heat and add the remaining 500ml of soy milk, stirring with a wooden spatula.

Transfer to a bowl or container and let it cool to room temperature (you can leave it in the pot if it fits in the fridge). Remove any film or surface bubbles for a clean finish.

Once set, scoop generously with a large spoon and serve. Add your favorite toppings to finish.

Do not use honey as a topping for children under 1 year old due to the risk of infant botulism!

Regarding steps 1 and 2: Dissolving in soy milk instead of water means it won't set if it boils. Be careful with the heat and ensure it's fully dissolved!
