Ingredients

Serves 2 servings
  1. 3chicken tenders (sasami)
  2. 2 tablespoonsmayonnaise (about 30 grams)
  3. 1 pinchsalt and pepper
  4. as neededPanko breadcrumbs,
  5. 4eggs
  6. 2 tablespoonssoy sauce (about 30 ml)
  7. 2 tablespoonsmirin (about 30 ml)
  8. 2 tablespoonssake (about 30 ml)
  9. 2 tablespoonssugar (about 24 grams)
  10. 1 pinchgranulated dashi
  11. 1/2 cupwater (about 120 ml)
  12. Cooked rice for 2 servings

Steps

  1. 1

    Cut the chicken tenders into your preferred size. Place the chicken and the mayonnaise, salt, and pepper in a plastic bag and massage to coat.

  2. 2

    Coat the chicken pieces with panko breadcrumbs, then gently press them flat with your hand.

  3. 3

    Pan-fry the chicken in a small amount of vegetable oil until golden brown. Once cooked, transfer to a plate and set aside.

  4. 4

    Add the soy sauce, mirin, sake, sugar, granulated dashi, and water to a frying pan and bring to a boil. Add the cooked chicken.

  5. 5

    Pour in half of the beaten eggs. When the eggs are just starting to set, add the remaining eggs and increase the heat to high.

  6. 6

    Serve the chicken and egg mixture over bowls of rice, and enjoy!
