Even inexpensive chicken tenders taste great in this dish! I wanted to make katsu donburi a little healthier by using chicken tenders, since regular katsu donburi can be high in calories.

Cut the chicken tenders into your preferred size. Place the chicken and the mayonnaise, salt, and pepper in a plastic bag and massage to coat.

Coat the chicken pieces with panko breadcrumbs, then gently press them flat with your hand.

Pan-fry the chicken in a small amount of vegetable oil until golden brown. Once cooked, transfer to a plate and set aside.

Add the soy sauce, mirin, sake, sugar, granulated dashi, and water to a frying pan and bring to a boil. Add the cooked chicken.

Pour in half of the beaten eggs. When the eggs are just starting to set, add the remaining eggs and increase the heat to high.

Serve the chicken and egg mixture over bowls of rice, and enjoy!
