Ingredients

Makes 1 onigiri
  • (For a light single serving) 1/2 cup cooked short-grain rice (about 85 grams), cooked slightly firm
  • (Divided use) 3 1/2 to 4 teaspoons seasoned tobikko (flying fish roe)
  • 2shiso leaves (can substitute with green onion)
  • 1/2 teaspoontoasted sesame oil
  • 1heaping teaspoon toasted sesame seeds

Steps

  1. 1

    Finely chop the shiso leaves. If you’re short on time, tear them into small pieces by hand.

    Line a deep bowl with a large piece of plastic wrap. Add the rice, half of the tobikko, and all other ingredients. Mix well. (Tip: See cookpad.com recipe ID:19937763 for a handy method.)

    Once mixed, gather the rice together with the plastic wrap, then flatten it out. Place the remaining half of the tobikko in the center. (Photo uses a generous 2 teaspoons of tobikko.)

    Wrap the rice around the filling, then twist the plastic wrap to form a tight ball, like a pouch.

    Shape the onigiri as you like through the plastic wrap. You can eat it as is, wrapped in the plastic wrap.

    You can also shape it into a triangle. The step photos use frozen brown rice, while the main photo uses white rice for a colorful look. Feel free to wrap with extra shiso or nori if you like.
