A one pound bag of dried beans is too much for just the two of us so I break them in half and make two different things out of them. The first go-round which was the first time I tried making dried beans in my instant pot, was red beans and rice. Don't look, you won't find it here because even though it tasted exceptionally good there were quite a few fails during the process. So I modified the recipe and here is the new one, but we're eating this with bread instead of rice because my wife wanted to, so it has a thinner broth. So give this a try and I'm pretty sure you will enjoy it. If you use a different type of bean, most likely you will need to adjust the cooking time. These small red beans take a lot longer to cook then some other types of dried beans.

Cooking Instructions

These are the types of beans I am using. Half the bag in my case.

Add dried beans to IP liner, after picking through them for debris.

Add broth, it needs to cover dried beans by about an inch to an inch and half, adjust as required, the ingredients measurement is a guide line.

Type of Sausage I am using

Ham Hocks I am using (half the package) boneless

Slice sausage, add to the liner with ham Hocks

Clean and cut veggies, I like a larger cut, add seasoning. Decision point - if you salt before you cook the beans they have a slight firmer texture, if you salt after the beans are cooked they have a softer texture. Add salt for the texture of beans you desire. Here for firmer, later for softer.

Set IP to pressure cook for 50 minutes, high.

I allow it to rest for 5 minutes after the cook time, just to make sure it has settled down inside, then quick release remaining pressure

Remove lid, remove ham hocks, debone (if needed) and shred, put meat back into pot, stir.

We were eating this with bread, not rice. We wanted a thinner soup like constancy. It you want red beans & rice, you can either take a stick blender and beat up some of the beans, or use a corn starch slurry to thicken it.

Ok, since this was the first time I made this in the IP, I figured it would need a couple/few more attempts before being worthy to put on Cookpad. I was very wrong. But that is basically why I have no step photos this time. I had not planned on publishing it from the start. The broth was "over the top" and the Ox Tails perfectly cooked, so I had to share. The leftover broth I used the next day to make Ramen! It turned out so good. We used the crusty bread, ripped in pieces, to soak up the broth. I wanted to do something different from noodles or rice. It worked perfectly, but rice or noodles would be fine also. I might try this with short ribs, I think they would work great in this.NOTE - a lot of Ox Tail recipes ask you to soak, and then par boil the tails. I did none of that, just so you know. I was intrigued with the fact that beef ribs could be done in about 30 minutes in the instant pot instead of hours in other methods. so I wanted to give it a try and they turned out really really good I was pretty impressed. If you want you can crisp them up under the broiler in the oven, after taking them out of the IP, put some BBQ sauce on them whatever strikes your fancy. We ate them straight out of the instant pot and they were very good as they were.I typically like a simpler rub on the ribs so that's what you will see here but you can do whatever strikes your fancy. This isn't the most traditional way of making ham and bean soup but still has amazing flavor. I didn't use ham hock, ham shank or bacon which seems to be common. We used a homemade ham stock that we had in the freezer made from the bone of a spiral ham. For the ham chunks I used a combination of leftover ham from a holiday meal and the last bit of the ham I smoked this past summer. If you don't have smoked ham or double smoked in my case you can use a smoked turkey leg and let it simmer in the pot. Or even a drop or two of liquid smoke just to give the extra depth of flavor. Also used the dehydrated onion in place of fresh chopped because it seemed like it would just get lost in there. The only thing I might do differently next time is add spinach or another green to the party. jason williams -

The IP does cut the total time down, and it is pretty easy, and the results were really good. So, this is a good one if you have an IP. My house smells so heavenly right now. The soup is in the final meld stage of cooking. This is an easy workday soup. Put the beans on when you wake up, turn them down when you leave for work, and add the veggies when you get home. pcflvly
