[Baby Food Late Stage] Microwave Hand-Held Omelet

No oil! No seasonings! This omelet is easy for babies to eat with their hands. It can be a standalone dish and is perfect for lunch on the go. The origin of this recipe: I often have lunch with my mom friends, but the challenge is always the baby's meal... I wanted something that could be frozen in portions and eaten after natural thawing, so I created this. Pack this omelet with frozen broccoli and bread, and your lunchbox is ready!

Ingredients

4 servings
  • 2eggs
  • About 1 cup (about 3.5 oz) vegetables (carrots, mushrooms, etc.)
  • 1 piececheese

Steps

  1. 1

    Finely chop the vegetables into slightly larger pieces. If using carrots or daikon, thin quarter slices are also fine.

    Microwave the vegetables (500W) for 1-2 minutes until they are easy to chew. Cut the cheese into cubes, beat the eggs well, and mix everything together.

    Line a plate with plastic wrap and pour the mixture from step 2 onto it. Cover loosely with the overhanging wrap or a new piece of wrap.

    Microwave (500W) for 2 minutes. If the center of the omelet is set, it's done! If not, continue heating in 10-second increments.

    Flip the omelet onto a plate with the wrap and let it cool. Once it has cooled slightly, cut it into pieces. Be careful, as it won't cut cleanly if it's too hot!

    If it becomes dry when frozen, add a mixture of water and cornstarch to step 2. Guide: 2 teaspoons water, 1 teaspoon cornstarch.
