Thaw the frozen tofu, drain it well, cut into four pieces, and sprinkle both sides with salt and pepper.

In a bowl, combine mayonnaise, egg, and garlic paste. Whisk well, then coat both sides of the tofu pieces from Step 1 with the batter.

Coat the battered tofu with panko breadcrumbs. Heat vegetable oil in a skillet and pan-fry the tofu on both sides until golden brown.

Slice the onion into bite-sized pieces, cover with plastic wrap, and microwave at 600W for 1 minute 30 seconds.

In an oyako pan or small skillet, combine mentsuyu, water, sake, and mirin. Heat until boiling, then add the microwaved onion from Step 4 and simmer for about 2 minutes.

Add the tofu katsu from Step 3 and eggs to the pan. Cover and simmer over low heat for about 2 minutes. Serve over bowls of rice to finish!
