Kabuto Sushi Cups for Children's Day

I made kabuto (samurai helmet) decorations using hard-boiled eggs! You can easily make these sushi cups with simple ingredients. With just a little extra effort and love, you can create something special.

I came up with this boy's version of sushi cups after making a similar one for Girls' Day! I put a lot of thought into this recipe. It's my proud creation—easy to make with simple ingredients, not too complicated. Please enjoy this kabuto sushi for boys, too!

Ingredients

Serves 2 servings
  1. 200 g(about 1 1/2 bowls) cooked rice
  2. 1 tablespoon (15 ml)rice vinegar
  3. 1 teaspoon (5 ml)sugar
  4. 1 pinchsalt
  5. 1 pinchpowdered kombu dashi (kelp stock)
  6. 1small can tuna (about 3 oz/80g)
  7. 2 teaspoons (10 ml)mayonnaise
  8. About 1 leaf green leaf lettuce or butter lettuce
  9. 1 sheetroasted seaweed (nori)
  10. 1hard-boiled egg
  11. 1egg
  12. 1 pinchsalt (for the egg)
  13. 1little cucumber
  14. About 1/2 slice ham
  15. 1little sliced cheese

Steps

    Mix the ingredients marked with ☆ (vinegar, sugar, salt, kombu dashi) together.

    Add the vinegar mixture from step 1 to the warm rice and mix well to make sushi rice.

    Drain the oil from the tuna can, add mayonnaise, and mix together.

    Prepare the hard-boiled egg. (Place the egg in a pot with water, bring to a gentle boil over medium heat, and cook for about 6 minutes for the perfect texture.)

    Wash the lettuce, tear it into bite-sized pieces, and pat dry.

    Cut the cucumber into four thin strips.

    Cut the ham into a triangle and a rectangle to match the size of the hard-boiled egg. Cut the sliced cheese into a smaller triangle than the ham.

    Beat the egg with a pinch of salt and make a thin omelet. Cut it into thin strips.

    Now, let's make the kabuto! First, cut the hard-boiled egg in half.

    Make small cuts on both sides of the hard-boiled egg.

    Insert the rectangular ham pieces from step 7 into the cuts on each side of the egg.

    After inserting the ham on both sides, it should look like this.

    Next, place the triangle-shaped ham on the egg.

    Layer the cheese and cucumber on top. (Cut the bottom of the cucumber strips at an angle so they stand up nicely.)

    Wrap a thin strip of nori around the front half of the egg to secure the toppings and help the kabuto hold its shape. The kabuto is now complete!

    Next, add a layer of sushi rice from step 2 to a cup. Since you'll be making four layers, add a small amount at a time.

    Place a piece of torn nori on top of the rice.

    Add a layer of lettuce from step 5.

    Add a layer of tuna mayo from step 3. Repeat the layers—rice, nori, lettuce, tuna mayo—a total of three times.

    After three layers of fillings and four layers of rice, you're done!

    Be careful not to use too much rice at first, or you won't have enough for the top layer.

    Top with plenty of the thin omelet strips from step 8.

    To make a homemade koi fish flag, wrap masking tape around a toothpick, cut out eyes from white paper, stick them on, and draw eyes and scales.

    Place the kabuto egg from step 15 on top, stick in your homemade koi flag, and you're done!

    Here's the back view. The nori is only wrapped around the front to hold the ham, cheese, and cucumber in place—not all the way around.
