Ingredients

  1. 500 geggplants, preferably big and round eggplant
  2. 2 cupsyogurt
  3. 2 clovesgarlic, crushed
  4. 1 teaspoonsalt
  5. 1 teaspoondried mint, finely ground
  6. 5/16 cupVegetable oil for frying

Cooking Instructions

    Wash and peel the eggplants and cut into relatively thick slices, widthwise.

  2. 2

    Fry the eggplant slices in vegetable oil until they become light brown in color; making sure not to burn them. Drain on a kitchen absorbent paper.

    Mix the yogurt, garlic and salt in a bowl.

  4. 4

    In a serving plate, pour half the quantity of the yogurt mixture, lay the eggplant slices on the yogurt, then add the remaining yogurt over the eggplants.

    Sprinkle with dried mint and serve cold.

I love to cook even though i don't always have time to do it. I like inviting friends and cooking the complete menu from starters to dessert. This I try to do a few times a year.I am big on baking. I started baking at around 6... And I still enjoy it a lot. It is a major stress reliever and I love the smells that come out from the oven! Plus it is always kind of magical to witness a batter becoming a cake :) Favorite things to cook: banana muffins, fancy salads, brownies. All kind of pasta.
