Ingredients

Serves 2 servings
  • 1boneless, skin-on chicken thigh (about 8 oz / 225 grams)
  • 1/2 stalkJapanese leek (or substitute 1/2 large green onion)
  • 2 bowlscooked white rice (about 2 cups / 320 grams)
  • Optional: green part of leek, chopped nori (seaweed), sansho pepper
  • 2 1/2 tablespoonssoy sauce (about 38 ml)
  • 2 tablespoonsmirin (about 30 ml)
  • 1 tablespoonsugar (about 12 grams)

Steps

    Cut the chicken thigh into 8–10 bite-sized pieces. Slice the leek into 1 1/4-inch (3 cm) pieces. Mix the soy sauce, mirin, and sugar together in a small bowl.

    Heat a frying pan with a little vegetable oil (not listed in ingredients). Place the chicken pieces skin-side down in the pan, and arrange the leek pieces around them. Turn the heat to medium.

    Cook without moving the chicken until the skin is golden brown, turning the leek pieces occasionally. Once the chicken is browned, flip it over and cook the other side for 1 minute.

    Pour the mixed sauce around the edge of the pan and simmer for about 1 minute, coating the chicken as the sauce thickens.

    Spoon the cooked rice into bowls and drizzle a little sauce over the top. Add the chicken and leeks. Top with your choice of chopped leek greens, nori, or plenty of sansho pepper. Enjoy!
