Crack the egg into a bowl and beat well.

Add the sugar, honey, and mirin. Mix well.

Add the flour and baking powder. Mix until just combined.

Heat a nonstick skillet over low heat. If your skillet has a temperature setting, set it to 285°F (140°C).

Once the skillet is hot, pour in 1 tablespoon of batter for each pancake. Cook on both sides until golden brown, making 8 to 10 pancakes. (If your skillet doesn't have a temperature setting, use low heat.)

Pair up the pancakes and sandwich your desired amount of sweet red bean paste (anko) between each pair.
