With a unique taste not found in Japanese udon, this dish is also great for hot summer days!

If using dried Inaniwa udon noodles, cook them separately until just al dente. If using frozen noodles, you can use them as is.

Cut the zucchini into bite-sized quarter slices.

Add the water and all ingredients except the noodles and red pepper flakes to a pot and bring to a boil.
- 4
Once boiling, add the noodles and simmer for a while. Adjust the spiciness with red pepper flakes if desired.
