Ingredients

Serves 1 serving
  1. 1 bundleInaniwa udon noodles
  2. 1/3zucchini
  3. 1 oz (30 g)frozen seafood mix
  4. 1–2 green chili peppers (shishito peppers are also fine)
  5. 2 teaspoons (10 g)Korean soup stock powder
  6. Red pepper flakes (to taste)
  7. 2 cups (500 ml)water

Steps

  1. 1

    If using dried Inaniwa udon noodles, cook them separately until just al dente. If using frozen noodles, you can use them as is.

  2. 2

    Cut the zucchini into bite-sized quarter slices.

  3. 3

    Add the water and all ingredients except the noodles and red pepper flakes to a pot and bring to a boil.

  4. 4

    Once boiling, add the noodles and simmer for a while. Adjust the spiciness with red pepper flakes if desired.
