Ingredients

  1. 1 TBSPOlive Oil
  2. 1onion, chopped
  3. 1-1/3 lbsground chicken or turkey (weight can be approximate) Note ground beef is good but not diabetic diet approved
  4. 1/4 cupalmond meal
  5. 1/4 cupwater
  6. 1egg, beaten
  7. 3/4 cuplow sugar BBQ sauce (reserve 1/2 cup)
  8. 1/2 tspgarlic powder
  9. 1/2 tspdried basil
  10. 1/4 tspdried thyme leaves
  11. 1/4 tspground pepper

    Preheat oven to 350 F.

  2. 2

    Spray loaf pan with non-stick cooking spray.

  3. 3

    In a small skillet, saute the onion in olive oil until tender. About 5 mins.

  4. 4

    Meanwhile, in a medium bowl, combine the chicken or turkey (or beef), almond meal, water, egg, 1/4 cup BBQ sauce, garlic powder, basil, thyme and pepper.

  5. 5

    Incorporate onion. If mixture seems too wet, add some more almond meal, but it should be fairly moist.

  6. 6

    Transfer mixture to the loaf pan.

  7. 7

    Bake until cooked through. At least 1 hour. Allow to sit 10 minutes before slicing.

  8. 8

    After plating, drizzle a little warmed BBQ sauce over the top, as desired.
