Peel the vegetables. Cut the onions into wedges, the carrot into 1/4-inch thick half-moons or quarter slices, and the potatoes into 4 to 8 pieces.

Heat oil, garlic, and ginger paste in a pan. Sauté the pork first, and when it changes color, add the vegetables and quickly stir-fry.

Add 2 1/2 cups (600 ml) of water and bring to a boil. Skim off any foam with a spoon. Adjust the water amount according to the curry roux package instructions.

Cover and simmer for about 20 minutes until the carrots are tender. Use a drop lid with a hole in the center to prevent the vegetables from breaking apart.

Add the roux and simmer while stirring until it thickens.

Finally, add butter and sugar and mix well.

Serve in bowls and enjoy.
