Ingredients

  • 3 1/2 ozpork belly
  • 1/3 stalkgreen onion
  • 1/3onion
  • 2 cupsdashi broth
  • 3 1/3 tablespoonsmirin
  • 2 2/3 tablespoonssoy sauce
  • 1.4 ozcurry roux
  • as neededWater and cornstarch mixture,
  • 2 bundlessoba noodles (or udon)

Steps

  1. 1

    Cut the pork belly into 1 1/4 inch wide pieces. Thinly slice the onion, and cut the green onion diagonally into 1/4 inch slices.

  2. 2

    Combine the dashi broth, mirin, and soy sauce in a pot and bring to a boil. Add the pork and onion, and once the pork is cooked through, add the green onion.

  3. 3

    Break up the curry roux and add it to the pot from step 2. Once the roux has dissolved, add the water and cornstarch mixture and bring to a boil until thickened.

  4. 4

    Serve the cooked soba (or udon) in a bowl and pour the curry mixture from step 3 over it to finish!
