This is our family's golden ratio for a delicious hot pot that makes any vegetables taste great. It doesn't use soy sauce, so the flavor stays fresh. You can make it with seasonings you already have at home—no need for store-bought hot pot soup base!

Ingredients

Serves 2 servings
  • 4 1/4 cupswater (1000 cc)
  • 1heaping tablespoon chicken bouillon powder
  • 1 teaspoondashi powder
  • 1/3 cupcooking sake (80 cc)
  • 3 1/2 tablespoonsmirin (50 cc)
  • 1/2-1 teaspoonsalt

Steps

  1. 1

    Add all the ingredients marked with ★ to a pot and bring to a boil. (This will cook off the alcohol.)

  2. 2

    Add your favorite vegetables and meat. Adjust the salt to taste.

  3. 3

    You can change up the flavor with vinegar, sesame seeds, or shichimi togarashi (Japanese seven spice). Adding garlic or ginger is also delicious! (Thanks for the feedback!)

    Common ingredients:
    - Napa cabbage
    - Chrysanthemum greens (shungiku)
    - Mushrooms
    - Bean sprouts
    - Daikon radish
    - Thinly sliced pork for hot pot
    - Konjac
    - Fried tofu
    - Chicken meatballs
    - Chikuwa (fish cake sticks)
    - Tofu, etc.
