These are the ultimate marinated eggs (ajitsuke tamago) that are perfect for ramen, as a snack, or even for New Year’s dishes—so good you’ll want to eat them all the time! Includes a foolproof recipe for soft-boiled eggs.

Combine the soy sauce, water, mirin, sugar, and the green part of the scallion in a saucepan. Heat until the scallion softens slightly.
Adding the scallion gives the marinade a rich, authentic flavor.

Bring plenty of water to a boil and cook the eggs.
Tip: Adding 1 tablespoon of vinegar (not included in ingredient list) to the boiling water helps prevent the eggs from cracking.

Gently lower the cold eggs straight from the fridge into the boiling water. Boil for 6 minutes and 30 seconds.

While boiling, gently stir the eggs with chopsticks or a spoon. This helps center the yolks for a beautiful soft-boiled egg.

Once cooked, transfer the eggs to an ice water bath. Rapid cooling causes the egg to contract, creating a small gap between the egg and shell, making them easier to peel.

Peel the eggs and place them in a zip-top bag with the marinade, including the scallion.
Let them marinate for 24 hours.

After 24 hours, your marinated eggs are ready! This is my favorite level of flavor. If you prefer a stronger taste, marinate for up to 2 days. Find your perfect flavor!

The yolks are creamy and the flavor is deeply infused—so delicious!

They’re great on their own, but I also recommend serving them with shredded scallions.
