Fluffy Soufflé Pancakes Using Pancake Mix

These soufflé pancakes are easy to make at home using pancake mix and a skillet. Enjoy a little café vibe at home with just a few ingredients!

Separate the egg white and yolk into two bowls.
Add the pancake mix, milk, and egg yolk to one bowl and mix well.

Make the meringue with a hand mixer.
Add 1/3 of the sugar and 1 drop of lemon juice to the egg white and beat.
Repeat this process a total of 3 times.

When the meringue is glossy and stiff peaks form (it doesn't fall out when you turn the bowl upside down), it's ready.

Add 1/4 of the meringue to the egg yolk mixture and mix well.
Then add 1/3 of the remaining meringue and gently fold it in, turning the bowl as you mix.

Pour all of the mixture from step 4 into the bowl with the remaining meringue and gently fold together.
Be careful not to overmix.

Mix gently and quickly so you don't deflate the meringue.

Heat a skillet and lightly oil it (use oil not listed in the ingredients).
Spoon the batter onto the skillet, piling it up high.

Cover and cook on low heat for 2 minutes.
For the second layer, add more batter on top.
Cover again and cook slowly.

When you can move the pancake with a spatula, flip it over.
Rolling it as you flip helps it turn over nicely.

Resist the urge to touch the pancakes while cooking.
Keep the lid on and let them cook slowly on low heat.

Continue cooking and check doneness by inserting a toothpick—if it comes out clean, they're done.

Top with powdered sugar, whipped cream, fruit, or jam as you like.

If you use a ladle to pile the batter high, you can make them even thicker.
Reducing the sugar to about 1 teaspoon (5 grams) also tasted great!
