Ingredients

  1. 2 cupsminute white rice uncooked
  2. 2 tbspbutter
  3. 2 tbspall purpose flour
  4. 1/2 cuponion, chopped
  5. 1/2 cupcelery, chopped
  6. 1/2 cupgreen bell pepper, chopped
  7. 1 clovegarlic, minced
  8. 1 pkgsmoked sausage, sliced
  9. 1 candiced tomatoes
  10. 1 canchicken broth
  11. 1 pkgfrozen sliced okra, thawed
  12. 1 tbspCajun seasoning
  13. 1/4 tspdried thyme
  14. 1/2 poundraw shrimp, peeled and deveined
  15. to tasteSalt and pepper

Cooking Instructions

    Prepare rice according to package directions.

    Melt butter in large skillet over medium high heat. Stir in flour; cook and stir until light golden brown, about 5 minutes. Add onions, celery, bell peppers and garlic; cook 2 to 3 minutes or until tender.

    Stir in sausage, tomatoes, broth, okra, seasoning and thyme; cover. Simmer 5 minutes, stirring occasionally.

    Add shrimp; cook 5 minutes or until shrimp are pink. Season with salt and pepper to taste. Serve with rice.
