Preparation: Separate the egg yolk and egg white. Place the bowl with the egg white in the freezer to chill for about 5 minutes.

Whisk the egg yolk in a bowl, then add the milk and mix well.

Add the pancake mix and stir until combined.

In a separate bowl, beat the chilled egg white. Gradually add a little sugar and continue beating until stiff peaks form.

Gently fold the meringue into the egg yolk mixture with a spatula, being careful not to deflate it.

Heat a nonstick skillet and lightly grease it. Remove from heat and place on a damp towel, then mound the batter onto the skillet.

Place the skillet over very low heat, cover, and cook slowly for about 7–10 minutes.

Carefully flip the pancake, cover again, and cook the other side until done.
