Beat the eggs, then mix in all the ingredients marked with ☆ (soy sauce, mirin, dashi granules, aonori, and water) until well combined.

Heat olive oil in a tamagoyaki (Japanese omelet) pan. Once hot, reduce to low heat and pour in the egg mixture in several batches, rolling each layer as you go.
