I love Thai food so much that I often eat two plates of stir-fried water spinach at my favorite restaurant. However, each plate costs about 1000 yen. One day, I noticed that my local supermarket was selling water spinach for about 120 yen, so I bought it immediately and tried to recreate the restaurant's flavor at home.

Cooking Instructions

Wash the water spinach well, trim the roots slightly, then cut into 1 1/2 to 2-inch pieces and drain well. Chop the garlic.

Add the ★ ingredients to a frying pan and heat over low heat to bring out the aroma, then turn to high heat and add the water spinach all at once.

When the water spinach turns a bright green, add the ☆ ingredients and stir-fry lightly to finish.

One pack of water spinach makes about one serving.

I watch the people in the food courts of Bangkok and Singapore make this so quickly and skillfully with amazement.I've cut down on the spice. If you like it spicy, add some Thai chili pepper powder or chili flakes at Step 3, or serve the noodles with some chili powder on the side. Mix it in as you eat!Rehydrate the sen lek (Thai rice noodles) following the package instructions. If you use boiling water the noodles will melt so be careful. It's safest to rehydrate them in cold water for 2 to 3 hours, even though it takes time.Work through Steps 2 to 4 in one go.
